This step softens the piñas, making it easier to extract the juice that will ultimately ferment into alcohol. Crushing the cooked agave—whether with a traditional tahona stone or a mechanized roller mill—releases the valuable liquid that contains all the potential flavors. After extraction, fermentation begins, allowing natural or introduced yeasts to work their magic. Over several days, sugars convert into alcohol, paving the way for the next transformation. 

Distillation and Refinement
